Basil And Lemon Sauce

This sauce is wonderful with simply grilled fish and even better with swordfish.

150ml vegetable stock
150ml white wine
3 shallots, chopped 
1 potato, fine chopped
handful basil leaves, torn
1tbsp olive oil
Juice 1/2 a lemon
1tsp lemon zest
salt and pepper

Put your stock and wine into a pan and bring to the boil. Add the shallot and potato and simmer until everything is tender. Remove from the heat and pour into a bowl with the olive oil and basil. Use a stick blender to blitz to a smooth consistency then stir in the lemon juice and zest and season.
